ReplyDeleteIt's all about summer produce for me -- specifically tomatoes and strawberries! Sad the season for the latter is already over, but I'll take peaches for now :)
ReplyDeleteMy favorite vegan recipe for summer changes every time I find a new recipe, but an old standby is a pinto bean salad with fresh corn, tomatoes, roasted poblanos, citrus vinaigrette, maybe some pepitas, and whatever other summery goodness I can think to add.

ReplyDeleteWatermelon. Slightly chilled, cut in thirds. Scoop with a spoon. Simple, and my absolute favorite summer food!

ReplyDeleteOpen Face Fresh tomato sandwich. Lightly toast your favorite bread. I use a yogurt spread ( you can use your favorite) first add tomato, top with fresh cheese of choice and garlic, sea salt a sprig of basil. Put in broiler and cook until cheese is melted.
For added bite and flavor can add cayenne pepper to taste.. Or a dash of dill. Your spice cupboard gone wild for fun.
My favorite summer recipe is salad! All different vegetables, corn, lettuce, tomatoes, avocados!!! I always add garbanzo beans of course!

ReplyDeleteMy favorite is watermelon juice with raspberries and a tad of ginger. Freeze in ice cube trays and add the cubes to your favorite mineral water with a slice of lime.
ReplyDeleteVegan zucchini muffins with cinnamon crumbles on top! In the summer, my garden gives me a billion and one zucchinis, so they're perfect!

ReplyDeleteI may have already replied on FB, I'm not trying to cheat, just cover my basis: In the heat, I love Gazpacho. Favorite recipe from Oryana:in addition to usual suspects, includes cilantro, roasted red peppers, balsamic, and Dijon mustard. Gonna try some today w/o the olive oil.

DeleteMy favorite vegan summer recipe is a simple salad made with fresh cucumbers, tomatoes, and dill. I add a little salt and pepper and YUM :)
ReplyDeletewhoa! Not sure if I entered but I'll do it now! My favorite summer meal starts with broiled tomatoes with pesto, then cold soba noodle salad with veggies and thai chili sauce and ends with fresh pineapple and watermelon salad.
ReplyDeleteFavorite summer recipe? Salad, fresh from my garden, and salt potatoes. What are salt potatoes? New, baby potatoes, any color, well scrubbed and boiled in very, very salty water. Drain them, melt some Earth Balance or really good Olive Oil over them, and serve with freshly grated pepper. Heaven!
ReplyDeleteIn the heart of summer there is nothing better than fresh tomatoes. Below is a meal I have prepared for my friends and they loved it (and P.S....never missed the meat)!
ReplyDeleteBruschetta with lots of garlic and basil on toasted homemade bread and salad with tomatoes, cucumbers, green onions, carrot and cilantro. I love the fruits of the garden with bright citrus vinaigrette!
Asparagus with a zest of lemon and EVOO is wonderful with mushroom popovers with fresh rosemary.
Berry cobble is the ultimate treat of summer. Fresh mixed berries with a touch of agave, fresh ground nutmeg and a little yogurt. Perfect!
And yea...I want a lovely Pinot Noir to go with it! :-)

ReplyDeleteI love kale chips, then have some pesto with quinoa, followed by almond flour carrot cake.
ReplyDeleteKale chips! Our entire family loves them! I have a fantastic, savory recipe from my mother in law that everyone loves, even my junk food loving friends. Even though I have to fight off the husband, three year-old and one year-old to get some, it's totally worth it.
ReplyDeleteOne of my absolute favorite things to enjoy in the summer is a flavorful fruit salad. It contains chopped cucumbers, mango, jicama , and oranges. It is then drizzled with fresh lemon juice, a pinch of salt and a bit of cayenne. This salad is so refreshing , healthy and tasty!
