Gift Giving Giveaway!!


Greetings, friends!

I hope you're all enjoying your week so far. I know it's a little early to start thinking about the holidays, but since it's always nice to have gifts on hand for other occasions, I felt oddly inspired to do a giveaway today! And when I feel oddly inspired, I simply cannot be stopped.

Many of you have ordered several copies of my first book, Radiant Health, Inner Wealth to give as presents. Thanks for that, by the way! In fact, this has happened so often that I've occasionally done gift-giving specials and discounts on multiple copies of that book. I've been told it's a great resource for new vegans as it includes over 240 recipes as well as a complete kitchen set-up, food glossary, menu planning guide, and a bazillion other handy tips.

Sooo....today I'm doing a giveway for THREE signed (2nd edition) copies of Radiant Health, Inner Wealth!   1. Fave fall dish:Roasted rosemary butternut squash; tho tied, and year- 'round -dish is chicky baby tofu and stir fry, having in fact tonite

    My favorite autumn recipe is simple: roasted butternut squash with lots of freshly ground black pepper. As the season continues I move from butternut squash to broccoli to romanesco.

  3. My fave fall recipe is also sooo easy. Root veggies (squash, sweet potatoes, parsnips, turnips, carrots, oh my!) tossed in olive oil, herbs (whatever I have on hand!), salt and pepper, and maybe a little drizzle of pure maple syrup or agave nectar. Serve with a brown rice pilaf and who could ask for anything more?

    My favorite fall recipes are anything kind of pumpkin desserts. I love pumpkin cookies, pumpkin muffins, pumpkin pies, and pumpkin soy ice cream. I especially love pumpkin things mixed with chocolate. I just wished I was in a state where I could enjoy the fall weather... because Fall is a myth in central Florida. :)

  5. Fave Fall recepie must be Pumpkin Pudding-so simple & so yummy-
    wash & cut one meduim pumpkin in half-scoop seeds, place face dowin on pan, put in 350 degree oven, pour about 1 C. water in the pan-bake an hour or so-scoop pumpkin pulp.
    To 2 C. of the baked/cooled pumpkin, add 2 C. of coconut whipped creme-made from canned or refrigerated coconut milk and 2-3 Tablesspoons cane sugar or agave whipped together...thats it. You have Pumpkin pudding. Best if chilled for an hour or more. Can add Nutmeg or cinnamon for added flavor. Yum.

  7. I've been following your blog for a while now and love to read your posts on healthy eats! Wish I could post a fantastic recipe but I am not much of a cook... yet - why I need a copy of RHIW! My favorite autumn meals usually include butternut squash soups, yummy fresh figs, and of course anything pumpkin. Thanks for all the healthy inspiration. :)

  9. Fall is my favorite time of year to cook. The garden is still producing tons of vegetables, and it's cool enough to enjoy heating up the kitchen. All manner of roasted root vegetables mixed together is probably my favorite dish. Closely followed by any soups or stews. For roasting I like sweet potatoes, regular potatoes, beets, celeriac, parsnips, carrots, radishes and winter squash with many cloves of garlic and a variety of herbs.

    My favorite is roasted veggies - sweet potatoes, beets, parsnips, rutabaga... whatever looks fresh at the store! I like making a huge batch and enjoying the leftovers throughout the week!

    I do live in Canada, but my sister lives in the US. :)
