No Will Power Cookies

No Will Power Cookies

Why no will power? Because you don’t need it with these cookies. No, it’s not because they aren’t delicious. They are. In fact, they’re totally, completely, freakishly satisfying. But here’s the thing—you only make four of them! So even if you eat the whole batch, you can still respect yourself in the morning. Plus, they’re incredibly easy to toss together. One pan, one spoon, one love.


2 tablespoons dark chocolate chips (vegan)
1 tablespoon natural peanut butter
1 tablespoon agave nectar or maple syrup
¼ teaspoon vanilla
Dash sea salt
¼ cup rolled oats (not instant)

1. In a small pan set to low heat, melt the chocolate chips and peanut butter, stirring constantly. As soon as the chocolate chips are melted, remove from heat.

2. Stir in the agave (or maple syrup), vanilla, and salt. Mix well to combine.

3. Stir in the oats until thoroughly combined.

4. Drop onto waxed paper to form four cookies. Chill for about 20 minutes in the fridge. Enjoy!

Makes 4 cookies (serves 2)
GF (if using gluten-free oats)/SF (if using soy-free chocolate chips)/Blue (according to the guidelines in my books)
30 Minutes or Under!

  1. I love how this recipe serves 2. I always get in trouble when I make a dessert that serves 10... because there is only me to eat it. :P

  4. 2T of cho chips is like 1 oz...I have used a vegan cho bar when I was in a pinch! simply the best!
